Brioche buns with buttered greens and eggs

Staples
- 4 tablespoons butter
- 2 cloves garlic
- to taste salt
- to taste pepper
- 4 eggs
- Heat 1 tablespoon of butter in a large skillet over medium-high heat. Split the 4 brioche buns and toast them cut-side down until golden, about 3 minutes, then set aside.
- In the same skillet, melt 2 tablespoons of butter over medium heat and mince 2 cloves of garlic into it. Add the 4 ounces of greens and cook, stirring, until wilted and any liquid has evaporated, about 4 minutes. Season with salt and pepper to taste.
- Push the greens to the sides of the skillet, then crack 4 eggs into the center. Cook until the whites are set but the yolks remain runny, about 4 minutes.
- Divide the toasted brioche buns between two plates. Top with the buttered greens, then slide 2 eggs onto each pair of buns. Drizzle any pan juices over the top.
Note Swap the greens for sautéed mushrooms or a simple tomato sauce. Leftovers don't keep well; eat immediately. Serve with a glass of wine or hot coffee.
