Chocolate oatmilk pudding with dates

A silky chocolate pudding made from the chocolate oatmilk itself, needing only a starch and dates to thicken and sweeten. The shelf does the heavy lifting tonight, and you'll have a bowl of comfort in ten minutes.

Serves 2. 10 minutes, 10 at the stove.

  • 1.5 cups chocolate oatmilk
  • 4 dates

Staples

  • pinch salt
  • 2 tablespoons cornstarch

  1. Pit and halve 4 dates, then chop them fine. Heat 1.5 cups chocolate oatmilk in a small saucepan over medium heat until it steams.
  2. Whisk 2 tablespoons cornstarch with 2 tablespoons cold water until smooth, then pour into the hot oatmilk while whisking constantly. Add the chopped dates and a pinch of salt.
  3. Simmer, stirring often, until the pudding thickens and coats the back of a spoon, about 2 minutes. The dates will soften and sweeten as it cooks.

Note Swap the dates for any dried fruit or ripe banana to taste. Chill leftovers and eat cold, or rewarm gently with a splash of water. Serve as is or with a crush of graham cracker, toast, or a handful of nuts.
