Crostini with apple cinnamon goat cheese

A log of apple cinnamon goat cheese is too good to waste on a cheese board. Toasted bread and a few pantry touches turn it into dinner in minutes. Tangy, sweet, and substantial enough for a tired night.

Serves 2. 20 minutes, 12 at the stove.

  • 1 small loaf or 8 slices crusty bread

  • 1 apple cinnamon goat cheese log

Staples

  • 2 tablespoons oil
  • to taste salt

  • 1 clove garlic

  1. Heat the oven to 400°F [200°C]. Slice 8 pieces of bread about one-third inch thick and lay them on a baking sheet. Brush each slice with 2 tablespoons oil total and toast until golden, about 6 minutes.
  2. Mince 1 clove garlic and stir it into the goat cheese log to distribute through the cheese. Season with salt and pepper to taste.
  3. Spread the warm toasted bread with 2 to 3 tablespoons of the cheese mixture per slice, dividing it evenly. Serve at once while the bread is still warm.

Note Swap the garlic for fresh thyme if you have it. Leftovers keep for two days covered; reheat the crostini in a warm oven. Serve with a green salad and a glass of white wine, or add thinned goat cheese mixed with honey as a dip for raw vegetables.
