Pineapple yogurt rice bowls with crisp onion

  • 1 container Tillamook pineapple fruit on the bottom farmstyle greek lowfat yogurt

  • 1 cup cooked rice
  • 2 tablespoons oil
  • 1 small onion
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

  1. Heat 2 tablespoons oil in a skillet over medium-high heat. Slice 1 small onion thin and fry it, stirring often, until the edges brown and it softens, about 5 minutes; season with 1/2 teaspoon salt and 1/4 teaspoon pepper as it cooks. Transfer to a plate.
  2. While the onion cooks, have 1 cup cooked rice ready and warm on a plate or in a bowl.
  3. Spoon the warm rice into two bowls. Top each with half the pineapple yogurt straight from the container, then scatter the crisp onion over it.

Note Swap the yogurt for plain Greek yogurt and stir in drained canned pineapple if you prefer a lighter sauce. Leftovers keep in the fridge for a day, though the yogurt will soften the rice; stir before eating. Serve with chopped cilantro or lime if you have it.
