Cheese and egg skillet with white american

When the shelf holds just processed cheese slices, a skillet supper is the answer. These melt into eggs and starch to make something homey and quick, built on what you likely have anyway.

  • 2 medium or 2 slices potato or bread

  • 4 slices sandwich white american cheese slices (Tropical)

Staples

  • 2 tablespoons butter
  • 4 eggs
  • to taste salt
  • to taste pepper

  1. Heat 2 tablespoons butter in a large skillet over medium heat. Dice or tear 2 medium potatoes or 2 slices of bread into half-inch pieces and add them to the pan, stirring occasionally until they start to brown, about six minutes.
  2. Crack 4 eggs into a bowl, beat them lightly with salt and pepper, then pour them over the potatoes or bread. Stir gently until the eggs begin to set, about two minutes.
  3. Tear 4 slices of white american cheese and scatter them over the eggs. Fold everything together until the cheese melts and coats the eggs and potatoes, another minute, then divide onto two plates.
  4. Taste and season with more salt and pepper if needed. Serve right away while hot.

Note Swap diced ham or leftover cooked vegetables for part of the potato. Leftovers keep two days covered in the fridge; reheat gently in a skillet with a touch more butter. Serve with hot sauce, a pickle, or a simple green salad.
