Cheesy egg and toast for two

This is a grilled cheese sandwich where the filling gets scrambled into the eggs and bread, all cooked together in one pan. The shelf's deli cheese melts fast and smooth, making it ideal for a weeknight when you need dinner in minutes.

  • 4 slices sliced bread

  • 2 tablespoons butter
  • 4 large eggs
  • 1/4 teaspoon salt
  • to taste pepper

  1. Heat 1 tablespoon of butter in a large skillet over medium heat. Lay 2 slices of bread in the pan and top each with 2 slices of cheese, then cover with the remaining bread to form two sandwiches.
  2. Cook until the bread is golden on the bottom, about 2 minutes. While the bread colors, crack 4 large eggs into a bowl, add 1/4 teaspoon of salt and pepper, and whisk them together.
  3. Flip both sandwiches carefully and add the remaining 1 tablespoon of butter to the pan around them. Pour the eggs over and around the sandwiches, scraping gently as they set so the curds fold into soft clouds, about 3 minutes.
  4. When the eggs are nearly set but still glossy, slide both sandwiches onto plates and spoon any remaining eggs alongside them.

Note Swap the white bread for sourdough or whole wheat for texture. Leftovers do not keep well. Serve with sliced tomato and a simple green salad dressed with oil and vinegar.
