Chicken and garlic pasta with spinach

Tyson grilled chicken patties cut into strips turn this weeknight pasta into dinner in under thirty minutes. The chickens are already cooked, so you are just building a light sauce around them with spinach and garlic. Serve it on pasta or over rice.

Serves 2. 25 minutes, 15 at the stove.

  • 4 oz fresh spinach
  • 1 lemon

  • 1 package (2.47 oz) Tyson fully cooked unbreaded grilled chicken patties

Staples

  • 6 oz pasta
  • 2 cloves garlic
  • 2 tablespoons oil
  • to taste salt
  • to taste pepper

  1. Bring a pot of salted water to a boil and cook 6 oz of pasta until just tender, 8 to 10 minutes; drain and set aside. Meanwhile, mince 2 cloves of garlic and cut the chicken patties into strips.
  2. Heat 2 tablespoons of oil in a large skillet over medium heat, add the garlic, and cook until fragrant, about 30 seconds. Add the chicken strips and warm through, stirring gently, about 2 minutes.
  3. Add 4 oz of fresh spinach in handfuls, stirring until wilted, about 2 minutes. Toss the cooked pasta into the skillet, squeeze the juice of half a lemon over it, and season with salt and pepper to taste.

Note Swap the spinach for arugula or kale if you prefer. Leftovers keep refrigerated for two days and reheat gently in a skillet. Serve with the remaining lemon cut into wedges and grated Parmesan at the table if you have it.
