Steak with blue cheese crust

Two thick steaks topped with melted Boar's Head blue cheese that forms a savory crust in the broiler. When you have beef but need to dress it up and dinner is in twenty minutes, this shelf has what you need.

  • two 8 oz [225 g] steaks beef steaks (New York strip or ribeye)

  • 4 oz [113 g] Boar's Head creamy blue cheese crumbles

  1. Heat your broiler to high. Pat two 8 oz steaks dry with paper towels and season both sides with salt and pepper. Heat 1 tablespoon oil in a large skillet over medium-high heat until it shimmers, then lay the steaks in and cook for four minutes without moving them.
  2. Flip and cook for another three minutes, until the second side is browned. Transfer the skillet to broil under the hot element, or transfer the steaks to a broiler pan and slide it under the broiler for two minutes to finish cooking through.
  3. Remove from heat and top each steak with 2 oz of Boar's Head blue cheese crumbles. Dot each with half a tablespoon of butter. Broil for two minutes more until the cheese melts and browns slightly.
  4. Let rest for two minutes, then plate and serve with pan juices spooned over the top.

Note Swap the beef for pork chops or thick fish fillets. Leftovers keep three days refrigerated and reheat gently in a warm oven. Serve with a green salad or roasted potatoes on the side.
