Blackeye peas with bacon and greens

A Southern-style bowl that takes advantage of the bacon already cooked into the beans, finished with wilted greens and hot pepper for quick weeknight dinner. The can does half the work.

Serves 2. 20 minutes, 12 at the stove.

  • 8 oz collard greens or kale
  • to taste hot sauce or fresh hot pepper

  • 1 can (15 oz) blackeye peas with bacon

Staples

  • 1 tablespoon oil
  • 2 cloves garlic
  • to taste salt
  • to taste pepper

  1. Heat 1 tablespoon oil in a large skillet over medium heat. Mince 2 cloves garlic and add to the pan, stirring until fragrant, about 1 minute.
  2. Drain the can of blackeye peas with bacon and add to the pan, stirring to coat with oil. Warm through, 3 to 4 minutes, while you prep the greens.
  3. Chop 8 ounces collard greens or kale, removing thick stems. Add to the beans in batches, stirring until wilted, about 4 minutes total. The pan is done when the greens are tender.
  4. Taste and season with salt, pepper, and hot sauce or fresh hot pepper to your liking. Divide between two bowls and serve warm.

Note Swap the greens for spinach or mustard greens if you prefer. Leftovers keep two days refrigerated and reheat gently on the stove. Serve with cornbread or rice on the side to stretch the meal.
