Greek bean salad with feta and herbs

A substantial salad built on garbanzos already dressed in lemon and garlic. Toss in feta, fresh herbs, and a crisp vegetable or two to make this quick, cold dinner that needs nothing but bread.

Serves 2. 10 minutes, 10 at the stove.

  • 4 oz [115 g] feta cheese, crumbled
  • 2 tablespoons chopped fresh dill or parsley

  • one 15 oz can cafe bean salad, greek garbanzo

Staples

  1. Empty one 15 oz can of greek garbanzo beans into a bowl. Stir in 4 oz crumbled feta and 2 tablespoons chopped fresh dill or parsley. Taste and season with salt and pepper.
  2. Halve a cucumber or a cup of cherry tomatoes if you have them and stir them in, or serve the salad alongside crackers or bread. The beans and feta are ready to eat cold.

Note Swap the fresh herb for 1 teaspoon dried oregano if needed. Keeps five days covered. Serve with crusty bread and a glass of white wine, or turn it into a wrap by spooning into pita with lettuce.
