Taco fiesta bowls with crispy cheese and greens

This is a weeknight bowl that comes mostly done in the box: just warm it, crisp some cheese on top, and pile on fresh greens to balance the beans and rice. The Bush's bowl has beans, rice, and a mild tomato sauce with corn built in, so you need only five minutes of your time.

Serves 2. 15 minutes, 5 at the stove.

  • 1 cup [113 g] sharp cheddar cheese, shredded
  • 4 cups [120 g] romaine lettuce or mixed greens

  1. Heat 1 tablespoon oil in a large skillet over medium-high heat and divide the contents of the box between two shallow bowls or a plate, breaking up any clumps. Once the oil shimmers, pour the mixture into the skillet and let it warm through for two minutes, stirring occasionally.
  2. Scatter 1 cup shredded cheddar over the beans and rice, stirring gently until some cheese melts into the warm grains and some stays in pieces. This will take one minute.
  3. Divide between two bowls and top each with 2 cups of fresh greens, a pinch of salt, and a light drizzle of oil.

Note Swap the cheese for cotija if you have it. Leftovers keep three days refrigerated; reheat gently with a splash of water. Serve with lime wedges, hot sauce, and sour cream on the side.
