Warm roasted red pepper and quinoa bowl

This is a quick warm salad built on a ready-made base of roasted vegetables, legumes, and grains. The bowl comes seasoned and needs only to be heated through and topped with cheese and greens to make a light, nourishing dinner for two.

Serves 2. 15 minutes, 5 at the stove.

  • 2 ounces feta cheese
  • 2 cups baby spinach

  • 1 box roasted red pepper with quinoa veggie bowl

Staples

  • 1 tablespoon oil

  1. Heat 1 tablespoon oil in a wide skillet over medium heat. Pour the entire contents of the roasted red pepper bowl into the skillet and stir gently to warm through, about 5 minutes.
  2. Taste and adjust salt and pepper as needed. Divide between two bowls and top each with 1 ounce crumbled feta cheese and 1 cup baby spinach.
  3. Serve warm, letting the heat from the grains and vegetables wilt the spinach slightly.

Note Swap the feta for crumbled goat cheese if you prefer. Leftovers keep refrigerated for two days and reheat gently; add fresh greens just before serving. Serve with crusty bread or a simple green salad on the side to make a full meal.
