Skirted biscuits with sausage gravy

A box of homestyle biscuits and some quick-cooked sausage make a weeknight dinner that feels like breakfast for supper. Brown the meat while the oven heats and you're eating in twenty minutes.

  • 6 ounces sausage meat
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

  1. Heat your oven to 375°F [190°C]. Arrange about 8 biscuits from your box on a baking sheet with a little space between them and place in the oven.
  2. While the biscuits bake, crumble 6 ounces of sausage into a skillet over medium-high heat and cook, breaking it apart as it browns, until no pink remains, about 5 minutes. Drain off all but 1 tablespoon of fat.
  3. Lower the heat to medium, add 2 tablespoons of butter to the sausage and let it melt, then sprinkle 2 tablespoons of flour over the meat and stir constantly for 1 minute until it smells nutty.
  4. Pour in 1 cup of milk, stirring often, and simmer until the gravy thickens enough to coat the back of a spoon, about 3 minutes. Season with 1/4 teaspoon salt and 1/4 teaspoon pepper and taste.
  5. When the biscuits are golden brown, split them and set them on two plates. Ladle the sausage gravy over the warm biscuits and serve right away.

Note Swap the sausage for ground beef if you prefer. Leftover gravy keeps in the fridge for three days and reheats gently with a splash of milk. Serve with a simple green salad or sautéed greens on the side.
