Biscuits and gravy with sausage

Warm split biscuits topped with creamy sausage gravy: the weeknight supper that needs no shopping when you have these on the shelf. A bowl of comfort that takes just thirty minutes, start to finish.

Serves 2. 30 minutes, 20 at the stove.

  • 1 1/2 cups whole milk

  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

  1. Heat the oven to 375°F [190°C] and bake the four biscuits until golden, about 12 minutes.
  2. While the biscuits bake, crumble 6 ounces of sausage into a heavy skillet over medium heat and cook, stirring often, until it browns and shows no pink, about 8 minutes.
  3. Sprinkle 2 tablespoons of flour over the sausage and stir constantly for 1 minute until no raw flour remains.
  4. Pour in 1 1/2 cups of milk and stir often until the gravy thickens and coats the back of a spoon, about 4 minutes; season with 1/2 teaspoon of salt and 1/4 teaspoon of pepper.
  5. Split the warm biscuits, place two halves on each plate, and spoon the sausage gravy over them.

Note Swap the sausage for bacon or ground beef if preferred. Leftovers keep in a covered container for two days; reheat gently on the stove with a splash of milk. Serve with a green salad or hot sauce on the side to cut the richness.
