Spicy honey bourbon chicken thighs

Bone-in chicken thighs get a quick sear then braise in this tangy-sweet sauce that's already built in. The sauce coats everything with minimal effort, leaving you time to make a side while the oven does the work.

  • 1/2 cup [120 ml] spicy honey bourbon thick sauce
  • 2 tablespoons [30 ml] spicy honey bourbon (Frank's Redhot)

  1. Heat 1 tablespoon oil in an oven-safe skillet over medium-high heat. Pat 4 chicken thighs dry and season both sides with salt and pepper. When the oil shimmers, place the thighs skin-side down and sear for 4 minutes until golden, then flip and sear another 2 minutes.
  2. Stir 1/2 cup spicy honey bourbon thick sauce and 2 tablespoons spicy honey bourbon together in a bowl. Pour the mixture over the chicken, turning the thighs to coat. Transfer the skillet to a 425°F [220°C] oven and bake for 25 minutes until the chicken is cooked through.
  3. Check that the internal temperature reaches 165°F [74°C] at the thickest part of the thigh. Let rest for 2 minutes in the pan, then serve the chicken with the sauce spooned over it.

Note Swap bone-in breasts if you prefer, adding 5 minutes to the oven time. Leftovers keep for three days; shred the meat and fold into rice or a grain bowl. Serve alongside steamed broccoli or a simple green salad to balance the richness.
