Warming be'f burrito bowls with quick toppings

These plant-based bowls have rice, beans, and seasoned soy protein built in, so you just warm them and dress them up. On a weeknight when energy is low, a good shortcut tastes like dinner.

  • 1 tablespoon oil

  1. Heat 1 tablespoon oil in a skillet over medium heat. Place both bowls in the pan and warm them through, stirring occasionally, until the rice and beans are hot and the edges are lightly crisped, about 8 minutes. You will know they are ready when steam rises and the texture loosens from the bottom.
  2. While the bowls warm, halve the lime and cut the avocado into thin slices. Transfer the warm bowls to two plates, top each with avocado slices, and squeeze lime juice over everything. Taste and add salt and pepper as needed.

Note Swap the avocado for a handful of raw cilantro if you prefer. Leftovers keep in the fridge for three days and reheat in a skillet with a splash of water. Serve with hot sauce on the side or a simple salsa.
