Buttered butternut squash spirals with sage

Spiralized butternut squash becomes a tender, sweet side that's ready in minutes. This shelf staple needs only butter, sage, and a pinch of salt to taste like a composed vegetable course. Serve it warm from the pan with any protein you have on hand.

  • one 10 oz package butternut squash veggie spirals

  • 3 tablespoons butter
  • 1/4 teaspoon salt
  • to taste pepper
  • 1/2 teaspoon dried sage

  1. Heat 3 tablespoons butter in a large skillet over medium-high heat until it foams and the foam begins to brown, about 2 minutes, stirring often.
  2. Add the entire package of butternut squash spirals and 1/2 teaspoon dried sage, tossing well to coat. Cook, stirring often, until the squash is tender and beginning to caramelize at the edges, about 7 to 9 minutes.
  3. Season with 1/4 teaspoon salt and pepper to taste. Divide between two bowls and serve at once.

Note Swap sage for thyme or rosemary if you have it. Leftovers keep refrigerated for two days and can be warmed gently in a pan or served at room temperature. Pair with roasted chicken, a steak, or a simple egg for a complete meal.
