Red wine vinaigrette grain bowl with mango

This shelf holds a full meal that needs only heat and a protein to round into dinner. A frozen power bowl comes with grain, vegetables, fruit, and vinaigrette built in; tonight you'll warm it and add chicken to make it satisfying enough for two.

  • 1 lime

  1. Heat 2 tablespoons of water in a skillet over medium-high heat. Open one 9 oz power bowl and pour it into the skillet. Stir often until the grains and vegetables are heated through, about 8 minutes.
  2. While the bowl heats, tear 2 cups of meat from a rotisserie chicken, discarding skin and bone. Squeeze juice from half a lime into the warm bowl and stir.
  3. Divide the warmed bowl between two plates and top each with 1 cup of chicken. Taste and season with salt and pepper.

Note Swap the rotisserie chicken for canned chickpeas drained and warmed, or smoked tofu cut into cubes. Leftovers keep two days covered in the refrigerator; reheat gently. Serve with a simple green salad or sliced cucumber on the side.
