Pan sausage with apple and onion

A fast sheet pan dinner where a good sausage is the whole meal, seared and roasted with apples and onions that caramelize into a sweet, savory side. The garlic and onion sausage here carries enough seasoning to carry the night.

  • 2 medium apples

  • 1 tablespoon oil

  1. Heat 1 tablespoon oil in a large skillet over medium-high heat. Once it shimmers, lay the sausage in the pan and sear for 3 minutes without moving, until browned on one side.
  2. Turn the sausage and sear the second side for 2 minutes. Transfer to a plate.
  3. Cut 2 medium onions into thin wedges and 2 medium apples into eighths. Add to the hot pan with a pinch of salt and pepper, tossing to coat with the fat left behind.
  4. Slice the sausage into 3-inch pieces on the bias and return them to the pan, nestling them into the apples and onions.
  5. Transfer the skillet to a 425°F [220°C] oven and roast for 12 minutes, stirring once halfway through, until the apples soften and the edges of the onions char.
  6. Pull from the oven, taste, and adjust seasoning with salt and pepper.

Note Swap apples for pear halves if you have them. Leftovers hold three days in the refrigerator and rewarm in a skillet over medium heat. Serve with bread or over rice to catch the pan drippings.
