Mozzarella and tomato pasta bake

A quick pasta bake that lets that shredded mozzarella do its job, melting into a blanket over pasta and tomato sauce. This shelf holds the one thing that makes a weeknight bake feel generous. Dinner is ready in under half an hour.

  • 1 can (14 oz) crushed tomatoes

  • 1.5 cups [170 g] Kraft mozzarella shredded cheese with whole milk

  • 6 oz [170 g] pasta
  • 2 tablespoons olive oil
  • 2 cloves, minced garlic
  • 1 small, diced onion
  • to taste salt
  • to taste pepper

  1. Heat oven to 450°F [230°C]. Bring a pot of salted water to a boil and cook 6 oz pasta until just under al dente, about 8 minutes; drain and set aside.
  2. While pasta cooks, warm 2 tablespoons olive oil in a skillet over medium heat. Add 1 small diced onion and 2 minced garlic cloves, cook until soft, about 3 minutes.
  3. Pour in one 14 oz can crushed tomatoes, season with salt and pepper, and simmer until slightly thickened, about 3 minutes, stirring now and then.
  4. Combine pasta with tomato sauce in a shallow baking dish. Top with 1.5 cups shredded mozzarella, spread to cover. Bake until cheese is golden and bubbling at the edges, about 8 minutes.

Note Swap in ricotta mixed with an egg for a creamier bake. Leftovers keep covered in the fridge for three days and rewarm gently in a low oven. Serve with a green salad on the side or garlic bread to stretch it.
