Cheesy bread and greens with soft egg

A bare shelf calls for something built on eggs and cheese. Tear the swiss into a crisp, molten topping for bread, then fry an egg over the whole thing with greens underneath to catch the yolk. Weeknight dinner from what any kitchen keeps.

Serves 2. 15 minutes, 12 at the stove.

  • 2 bread (a roll or thick slice)
  • 2 handfuls spinach or greens

  • 4 slices sliced baby swiss cheese (Land O Lakes)

  • 2 tablespoons oil
  • 1 tablespoon butter
  • 2 eggs
  • to taste salt
  • to taste pepper
  • 1 clove garlic

  1. Heat 1 tablespoon of oil in a skillet over medium-high heat. Lay 2 slices of bread into the pan and toast on one side until golden, about two minutes, then flip.
  2. When the second side is golden, lay 2 slices of swiss cheese over each bread slice and remove the pan from heat to let the cheese soften, about one minute.
  3. Add 1 tablespoon of butter and another tablespoon of oil to the pan over medium heat. Tear 1 clove of garlic into the fat and stir 2 handfuls of spinach through the pan until just wilted, about two minutes.
  4. Push the wilted greens to one side of the pan and crack 2 eggs into the empty space. Cook the whites until set but the yolks still run, about three to four minutes, seasoning the whites with salt and pepper as they firm.
  5. Slide the cheesy bread onto plates, pile the greens alongside, and top each bread with one soft egg, letting the yolk run into the greens and into the cheese.

Note Swap the swiss for cheddar or provolone if you keep them. Leftovers keep a day refrigerated and reheat gently in a skillet. Serve with a pickle or hot sauce on the side.
