Pan-seared pork ribs with mustard glaze

These marinated country-style ribs need only a quick sear and glaze to become dinner. The brining in the package means the meat stays moist and takes on flavor fast, so you have a two-person meal in thirty minutes with nothing but pantry staples and one mustard jar.

  • 3 tablespoons whole grain mustard
  • 2 tablespoons honey

  • 1 lb [450 g] country style boneless pork ribs

Staples

  • 2 tablespoons oil
  • to taste salt
  • to taste pepper
  • 2 cloves garlic
  • 1 tablespoon butter

  1. Heat 2 tablespoons oil in a large skillet over medium-high heat. Pat 1 lb boneless pork ribs dry with paper towels, season with salt and pepper on both sides. When the oil shimmers, lay the ribs flat in the pan and sear without moving them until the bottom is golden, about 4 minutes.
  2. Flip the ribs and sear the other side until golden, another 4 minutes. Transfer to a plate while you make the glaze.
  3. Mince 2 garlic cloves and add them to the same skillet over medium heat with 1 tablespoon butter. Cook until fragrant, about 1 minute.
  4. Whisk in 3 tablespoons whole grain mustard and 2 tablespoons honey, stirring to combine, then return the ribs to the pan. Turn to coat both sides in the glaze and simmer until the meat is tender when pierced, about 8 to 10 minutes, turning once halfway through.

Note Swap the honey for maple syrup or even soy sauce for a deeper glaze. Leftovers keep four days refrigerated and taste good cold or reheated gently in a skillet. Serve with rice, crusty bread to soak up the glaze, or steamed greens on the side.
