Creamy coconut chicken with rice

This shelf holds only a carton of coconut milk, so dinner starts with staples: chicken thighs seared in a pan, then braised in that coconut milk with garlic and ginger, served over rice. The vanilla note stays subtle and rounds out the sauce.

Staples

  • to taste salt

  • 3/4 cup rice
  • 2 cloves garlic
  • 1/2 medium onion

  1. Start 3/4 cup rice in 1 1/2 cups salted water; bring to a boil, then cover and reduce heat to low for 18 minutes.
  2. While rice cooks, pat 1 lb bone-in skin-on chicken thighs dry, season all over with salt and pepper, and heat 1 tablespoon oil in a large pan over medium-high heat. Sear thighs skin side down until golden and crisp, about 5 minutes, then flip and sear another 2 minutes; transfer to a plate.
  3. In the same pan, cook 1/2 medium diced onion and 2 minced garlic cloves over medium heat until fragrant, about 1 minute. Stir in 1 teaspoon grated fresh ginger, cook 30 seconds more.
  4. Pour in the full carton of coconut milk, scraping up any browned bits from the pan, and return the chicken with any juices to the pan. Bring to a gentle simmer over medium heat, then reduce to medium-low and simmer uncovered for 12 to 15 minutes, until chicken is cooked through.
  5. Taste the sauce and adjust salt and pepper. Serve chicken and sauce over the cooked rice.

Note Swap the chicken for firm white fish fillets added in the last 5 minutes of cooking, or for shrimp. Leftovers keep, covered, for 3 days; rewarm gently on the stovetop. Serve with lime wedges and a simple green salad or steamed greens on the side.
