Chocolate hemp mousse with sea salt

A shelf that holds only chocolate hemp beverage calls for dessert masquerading as dinner. Whipped into mousse and set with just egg white, it comes together in five minutes for two. Serve with toast or fruit to feel like you cooked.

Serves 2. 30 minutes, 5 at the stove.

Staples

  • 1/4 teaspoon salt

  1. Separate one large egg and discard the yolk. Whip the white until stiff peaks form, about two minutes.
  2. Pour one and a half cups chocolate hemp beverage into a bowl and whisk in half a cup heavy cream until it holds soft peaks, about one minute.
  3. Fold the whipped egg white into the mousse gently in two additions, using a spatula to turn the mixture over itself until no white streaks remain. Divide between two bowls and refrigerate for twenty minutes.

Note Swap heavy cream for oat milk for a lighter mousse. Store covered for two days. Serve with thick toast spread with butter and jam, or alongside berries or sliced stone fruit. A pinch of fleur de sel on top lifts it.
