Vanilla soy milk custard with almond brittle
A simple baked custard built on vanilla soy milk for its creaminess and subtle sweetness. The custard cooks while you make a quick almond brittle to crack over the top, turning pantry staples into something worth lingering over on a quiet night.

- 2 eggs
- 2 tablespoons [28g] butter
- 1/4 teaspoon salt
- 2 tablespoons sugar
- 1 tablespoon flour
- Heat your oven to 325°F [160°C]. Whisk together 1 cup of the soy milk with 2 eggs, 2 tablespoons sugar, 1 tablespoon flour, and 1/4 teaspoon salt until smooth. Pour into two buttered ramekins or a small baking dish, set them in a larger pan, and pour hot water into the larger pan until it reaches halfway up the sides of the ramekins. Bake until the custard is set but still trembles slightly in the center, 25 to 30 mi
- While the custard bakes, melt 2 tablespoons butter in a small skillet over medium heat. Add 1/3 cup sliced almonds and stir until they turn golden and smell nutty, about 4 minutes. Scatter 2 tablespoons sugar over the almonds, keep stirring, and once the sugar melts and caramelizes to an amber color, after about 2 minutes, pour the brittle onto parchment paper to cool and harden.
- Once the custard is set and the brittle has cooled, crumble the brittle into shards and scatter over the warm custard. Serve right away.
Note Swap the almonds for any nut you have on hand. Covered, the custard keeps in the fridge for three days; the brittle will soften, so make it fresh to crumble over just before eating. Serve with a glass of the same soy milk, poured over ice, or with strong black coffee.
