Broccoli cheese soup with crisp bread toasts

Progresso broccoli cheese soup becomes a light weeknight dinner when you enrich it with cream and eggs, then top with buttered bread toasts. The rice in the can carries the meal, and you'll have it on the table in twenty minutes.

  1. Heat the oven to 400°F [200°C]. Slice 4 thick pieces of bread and brush both sides lightly with 1 tablespoon butter, then arrange on a baking sheet and set aside.
  2. Pour the entire can of Progresso broccoli cheese soup into a saucepan and stir in 1/2 cup heavy cream and a pinch of salt and pepper. Heat over medium, stirring occasionally, until it reaches a gentle simmer.
  3. While the soup heats, slide the buttered bread into the oven and bake until golden and crisp on both sides, about 5 minutes, turning halfway through. The bread is done when it's toasted and brittle.
  4. When the soup is simmering, taste and adjust seasoning with salt and pepper as needed. Ladle the soup into two bowls and serve at once with the hot buttered toasts on the side for dipping or crumbling.

Note Swap the bread for crackers or croutons if you prefer. Leftover soup keeps covered in the refrigerator for three days; reheat gently on the stove with a splash of water. Serve with a green salad or raw vegetables alongside to lighten the meal.
