Chicken with French Onion Yogurt Sauce

Quick pan chicken in a tangy, savory yogurt sauce that tastes like French onion soup. The dip does most of the heavy lifting, turning into a silky pan sauce while the chicken cooks. Dinner is on the table in half an hour.

  • 2 tablespoons oil
  • to taste salt

  • 1 tablespoon butter
  • 2 cloves garlic
  • 1 small onion

  1. Pat 2 chicken cutlets dry with paper towels and season both sides with salt and pepper. Heat 2 tablespoons oil in a large skillet over medium-high heat until shimmering. Lay the chicken in the pan and sear until the first side is golden, about 4 minutes.
  2. Flip the chicken and cook the other side until golden and the chicken reaches 165°F [74°C] at the thickest part, about 3 to 4 minutes more. Transfer the chicken to a plate.
  3. To the same skillet, add 1 tablespoon butter and stir in 2 minced garlic cloves and 1 small diced onion. Sauté, stirring often, until the onion is soft, about 3 minutes.
  4. Scrape any browned bits from the bottom of the pan with a wooden spoon. Stir in the entire container of french onion dip until smooth, then add 1/4 cup water and whisk to combine. Simmer gently for 2 minutes, stirring now and then, until the sauce thickens slightly.
  5. Return the chicken to the skillet, nestling it into the sauce to coat both sides. Warm through for 1 minute, then taste and adjust salt and pepper.

Note Swap chicken for thick white fish fillets or firm tofu, cooking for less time. Leftovers keep, covered, for two days and can be reheated gently. Serve over egg noodles, rice, or crusty bread to catch all the sauce.
