Crisp chickpea toasts with Greek hummus

Greek hummus straight from a jar becomes dinner when you top it with crisp roasted chickpeas and serve it on toast. The chickpeas give you texture and protein while the hummus does the heavy lifting for flavor, all ready in twenty minutes.

Serves 2. 20 minutes, 10 at the stove.

You need

To buy

  • 4 slices bread for toasting
  • 1 can (15 oz) canned chickpeas, drained and dried

  • 1 container (10 oz) Greek inspired hummus, Sabra

Staples

  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 clove, minced garlic

  1. Heat your oven to 400°F (200°C). Toss 1 and a half cups of drained chickpeas with 1 tablespoon of olive oil, 1 minced garlic clove, 1/4 teaspoon salt, and 1/4 teaspoon pepper in a bowl until coated. Spread on a baking sheet in a single layer.
  2. Roast the chickpeas until they are golden and crisp, about 12 to 15 minutes, shaking the pan halfway through. While they roast, toast 4 slices of bread until golden and brush each slice with 1/4 tablespoon of olive oil.
  3. Spread about 1/4 cup of hummus on each warm toast. Top with the warm crisp chickpeas and serve right away.

Note Swap the canned chickpeas for store-bought roasted chickpeas if you have them on hand and skip the roasting step. Leftovers keep in an airtight container for two days; reheat the chickpeas in a dry pan. Serve with a green salad dressed in lemon and olive oil, or alongside roasted vegetables.
