Pork roast with buttered egg noodles

The roast comes ready to eat; just heat it gently with egg noodles and let the gravy bind them together. This is a weeknight dinner that needs only a pan and ten minutes of your attention.

Serves 2. 20 minutes, 10 at the stove.

  • 1 package fully cooked seasoned pork roast with gravy (Schnucks)

Staples

  • 6 ounces pasta
  • 1 tablespoon butter
  • to taste salt
  • to taste pepper

  1. Bring a pot of salted water to a boil. Add 6 ounces of egg noodles and cook until just tender, about 8 minutes, stirring once or twice. Reserve 1/2 cup of the cooking water, then drain the noodles in a colander.
  2. While the noodles cook, open the pork package and transfer the roast and gravy to a skillet over medium heat. Let it warm through for 3 to 4 minutes, stirring gently once.
  3. Toss the cooked noodles with 1 tablespoon of butter in the pot. Pour the warm pork and gravy over the noodles, add 1/4 cup of the reserved cooking water, and stir gently to coat. Add more cooking water if the noodles need it to come together with the gravy. Taste and adjust the salt and pepper.

Note Swap egg noodles for buttered rice or mashed potatoes if you have them. Leftovers keep in the fridge for two days; reheat gently with a splash of water. Serve with a quick salad or steamed green beans on the side to round out the plate.
