Stouffer's steak and potatoes with greens

Slow-roasted beef stew from the freezer gets dressed up with a quick sauté of fresh greens and a splash of vinegar, turning a weeknight shortcut into something that tastes like you actually cooked. The potatoes and braised beef are already done; you're just adding texture and brightness.

Serves 2. 25 minutes, 10 at the stove.

  • 4 ounces fresh spinach or other tender greens
  • 1 tablespoon red wine vinegar or cider vinegar

  • 1 package, 13 1/2 oz Stouffer's bowl-fulls slow-roasted steak and potatoes

  • 1 tablespoon oil
  • to taste salt
  • to taste pepper
  • 1 clove, minced garlic

  1. Heat 1 tablespoon oil in a large skillet over medium heat. When it shimmers, add 4 ounces fresh spinach or tender greens and 1 minced garlic clove, stirring until the greens wilt, about two minutes. Stir in 1 tablespoon vinegar and season with salt and pepper, then transfer to a plate.
  2. Heat the Stouffer's package according to package directions (usually five to seven minutes in the microwave or oven). While it heats, you can finish seasoning the greens.
  3. Spoon the steak and potatoes onto two warm plates, top with the dressed greens, and serve at once.

Note Swap the greens for sautéed mushrooms or roasted broccoli if you prefer. Leftovers keep covered in the refrigerator for two days; reheat gently. Serve with crusty bread to soak up the braise liquid, or add a simple green salad on the side.
