- Heat the tortillas in a dry skillet over medium heat, warming each for about 30 seconds per side until pliable, then stack them and wrap in a clean kitchen towel to stay warm.
- Shred the chili lime pork with two forks until it breaks into bite-sized pieces, then warm it in the same skillet over medium heat for 2 minutes, stirring once.
- Halve the avocado lengthwise, remove the pit, slice the flesh, and squeeze juice from the lime half over it to prevent browning.
- Assemble each taco by placing a tortilla flat, adding a handful of warm pork down the center, laying avocado slices on top, and finishing with cilantro leaves and a pinch each of salt and pepper.
Note Swap the avocado for sliced radishes or red onion if you prefer crunch. Leftover pork keeps three days in the fridge; reheat gently and serve the next night with rice. Serve with hot sauce and lime wedges on the side.
