Cilantro lime shrimp burrito with quick tomato salsa
A frozen burrito that needs only heat and a fresh topping to become dinner. The salsa takes three minutes and cuts through the richness with bright acid and salt, turning a weeknight shortcut into something that tastes like you tried.

- to taste salt
- 1/4 medium onion
- 2 tablespoons, chopped cilantro
- Dice 8 ounces of tomatoes into a small bowl. Mince 1/4 of a medium onion fine and add it. Squeeze juice from half a lime over the mixture and scatter 2 tablespoons of chopped cilantro on top. Stir gently and taste for salt, adding a pinch or two. Set aside.
- Wrap each of the two burritos loosely in a damp paper towel and place them on a microwave-safe plate. Microwave on high power for 3 to 4 minutes, until they are hot all the way through and a fork pierces the tortilla with no resistance. While they heat, squeeze the remaining lime half into a wedge for the table.
- Unwrap the burritos onto two plates. Spoon the tomato salsa over the top of each one and serve with the lime wedge on the side.
Note Swap the tomato salsa for store-bought pico de gallo or hot sauce if you prefer. Leftovers keep wrapped in foil in the refrigerator for two days; reheat gently. Serve with a cold beer or lime agua fresca and a green salad to round out the meal.
