Butternut squash quiche, reheated with greens
The whole foods quiche comes ready to eat, but tonight it turns into a warm dinner by reheating alongside a quick sauté of greens with garlic. The apple and sage flavours need only greens and stock to become a proper meal for two tired cooks.

- 2 cloves garlic
- 2 tablespoons oil

- Heat the oven to 350°F [175°C]. Unwrap the quiche and place it on a baking sheet, then put it in the oven while you prepare the greens.
- Slice 2 cloves garlic thinly. Heat 2 tablespoons oil in a large skillet over medium-high heat and add the garlic, stirring until fragrant, about 30 seconds.
- Add 5 ounces fresh spinach or kale to the skillet in batches, stirring as it wilts. Pour in 1 cup stock once the greens are mostly wilted, then simmer for 3 to 4 minutes while the quiche finishes.
- Season the greens with salt and pepper to taste. The quiche should be warm through when you pull it from the oven, its crust light and the filling just set at the edges.
Note Swap the greens for sautéed mushrooms or roasted root vegetables if you have them. Leftover quiche keeps wrapped in the fridge for three days and reheats well. Serve with a wedge of apple or a small salad on the side.
