Amy's three cheese cornmeal crust pizza, crisped

A frozen pizza with a cornmeal crust and three cheeses already built in. You crisp it in a hot pan with a little oil to wake up the cheese and crust, then finish it under the broiler so the top gets some color. Dinner in twenty minutes.

  • 1 Amy's three cheese mozzarella, chevre, parmesan cornmeal crust pizza

  • 1 tablespoon oil

  1. Heat 1 tablespoon oil in a large skillet over medium-high heat until shimmering. Set the frozen pizza into the pan without thawing and cook for four to five minutes, until the crust browns and starts to crisp on the bottom.
  2. While the crust crisps, turn on the broiler and position an oven rack six inches below the heating element. Transfer the pizza from the skillet to a baking sheet.
  3. Slide the sheet under the broiler and broil for two to three minutes, until the cheeses melt and the top begins to brown.

Note The cornmeal crust will brown and crisp better in the pan than the oven alone. Leftovers keep in an airtight container for two days, reheated in a four hundred degree [two hundred] oven for five minutes. Serve with a simple green salad or roasted broccoli.
