Crisp cheese and bean burrito with salsa

Two frozen burritos become dinner in under twenty minutes when you pan-fry them until the wrapper crisps and the filling warms through. The beans and rice inside are already seasoned, so you only need salsa and maybe a cold drink to feel fed.

Serves 2. 20 minutes, 15 at the stove.

  • 1 tablespoon oil

  1. Heat 1 tablespoon oil in a large skillet over medium-high heat until the surface shimmers. Place two frozen burritos seam-side down in the pan and fry for three to four minutes until the bottom is golden brown and crisp.
  2. Turn each burrito carefully with tongs or a spatula and cook for another three to four minutes on the second side until that side is also golden brown.
  3. Slide the burritos onto plates and serve immediately with salsa and any toppings you like.

Note Swap the salsa for hot sauce or drizzle with sour cream if you prefer. Leftover cooked burritos keep in the fridge for three days and can be reheated gently in a skillet. Serve with a green salad or side of Mexican rice to stretch the meal.
