Baked bean and cheese burritos with salsa

Two frozen burritos transform into a quick weeknight meal when heated and topped with fresh salsa. The burritos give you beans, rice, and cheese in one package, so you only need to round them out with bright toppings. Ten minutes of hands-on work gets dinner on the table.

  • 1 small bunch fresh cilantro
  • 1 lime

  1. Heat 1 tablespoon oil in a large skillet over medium heat. Place the two burritos seam side down in the pan and cook until the bottoms are golden and crisp, about 5 minutes.
  2. Flip each burrito carefully and cook the other side until golden, about 4 minutes more, until the filling is heated through.
  3. While the burritos finish, chop 2 tablespoons fresh cilantro and cut the lime into wedges. Plate the burritos and top with cilantro, a squeeze of lime juice, and salt and pepper to taste.

Note Swap the cilantro and lime for salsa from a jar if you prefer. Leftovers keep refrigerated for a day and reheat well in the skillet. Serve with a side salad dressed with lime and oil, or add sour cream and avocado if you want to stretch the meal.
