Reheated enchilada with Spanish rice and beans

Amy's frozen enchilada is a complete dinner that just needs heat. The tofu and black beans give you protein, the rice and pinto beans fill the plate, and the vegetables are built in. Warm it and walk to the table.

Serves 2. 15 minutes, 3 at the stove.

  1. Remove the enchilada from the freezer and place the entire package in a microwave-safe container if it is not already in one.
  2. Microwave on high for 12 to 14 minutes, stirring once halfway through, until heated through and steaming.
  3. Let sit for 1 minute, then divide between two bowls. Season with salt and pepper to taste.

Note Swap the microwave for a 375°F [190°C] oven for 20 minutes if you prefer. Leftovers keep refrigerated for three days; reheat gently. Serve with hot sauce, sour cream, lime wedges, or fresh cilantro if you have them on hand.
