Pesto penne with roasted tomatoes and garlic

Heat the Amy's pesto penne straight from the freezer, then finish it with fresh roasted tomatoes and garlic to brighten what's already there. Twenty minutes and you have a meal that tastes like you shopped and cooked.

Serves 2. 25 minutes, 8 at the stove.

  • 8 ounces cherry tomatoes
  • small bunch fresh basil

  • 1 box (2 bowls) pesto penne pasta with vegetables bowls, pesto (Amy's)

Staples

  • 2 tablespoons olive oil
  • 3 cloves garlic
  • to taste salt
  • to taste pepper

  1. Slice 3 garlic cloves thin and toss with 8 ounces halved cherry tomatoes and 2 tablespoons olive oil on a baking sheet; roast at 425°F [220°C] until the tomatoes burst and char at the edges, about 12 minutes.
  2. Heat the two Amy's pesto penne bowls according to package directions, either in the microwave or in a pot of simmering water; they will take about 4 to 6 minutes.
  3. Divide the hot pasta between two bowls and top each with half the roasted tomato mixture; tear a handful of fresh basil over each bowl and season with salt and pepper to taste.

Note Swap the roasted tomatoes for roasted mushrooms or pine nuts if that suits your pantry better. Leftovers keep three days covered in the fridge; reheat gently and add more fresh basil. Serve with a green salad and crusty bread to soak up the oil.
