Pastrami and Swiss on toasted rye

This is a proper deli sandwich, built on what's already in your kitchen. The pastrami is fully seasoned, the bread is substantial, and the whole thing comes together in the time it takes to toast.

  • 1 sub pastrami & swiss cheese sub, pastrami & swiss cheese (Boar's Head)

  • 1 tablespoon butter

  1. Slice the sub in half crosswise to make two portions. Warm 1 tablespoon butter in a skillet over medium heat.
  2. When the butter foams, set each half sandwich cut-side down into the pan and toast until the bread is golden and crisp, about 2 to 3 minutes. The cheese will begin to soften from the heat below.
  3. Flip each half and toast the other side for 1 to 2 minutes more, until warm through.
  4. Transfer to a plate and serve hot.

Note The pastrami keeps, wrapped, for a few days in the fridge; slice any leftovers cold for tomorrow's lunch or warm them in a pan. Serve with a sharp mustard, pickles, or a simple salad on the side if you want to stretch the meal.
