Basil garlic alfredo pasta for two

A quick weeknight dinner that turns a jar of alfredo into something that feels made from scratch. A head of broccoli and some parmesan round it out, and pasta dinner is ready in the time it takes to boil water.

Serves 2. 20 minutes, 12 at the stove.

  • 1 small head broccoli

  • 1 jar (about 15 oz) basil garlic alfredo pasta sauce

  • 8 oz pasta
  • as needed salt
  • to taste pepper
  • 1 tablespoon butter

  1. Bring a pot of salted water to a boil and add 8 oz pasta. Cut 1 small head of broccoli into florets and add them to the pot 2 minutes before the pasta finishes cooking. Drain both together when the pasta is al dente.
  2. While the pasta cooks, open the jar of alfredo sauce and scrape it into a large skillet with 1 tablespoon butter over medium heat. Warm through, stirring occasionally, until it reaches a gentle simmer.
  3. Add the drained pasta and broccoli to the sauce and toss to coat evenly. Season with salt and pepper to taste, then divide between two bowls.
  4. Grate or shave extra parmesan over each serving if you have it on hand.

Note Swap in spinach, zucchini, or green beans for the broccoli. Leftovers keep for three days in the fridge and reheat gently with a splash of water stirred in. Serve with crusty bread and a simple salad to round out the meal.
