Cheese melts on wheat toast

Two Swiss cheese slices on toasted bread turn into an open-faced melt in minutes, salty and stretched. It is fast and it is dinner when there is nothing else in the house. Serve with a pickle or apple on the side.

Serves 2. 12 minutes, 5 at the stove.

  • 2 slices bread (wheat or sourdough)

  • 4 squares Swiss cheese snack squares

Staples

  • 1 tablespoon butter
  • pinch salt
  • pinch pepper

  1. Heat the broiler to high. Butter two slices of bread on both sides and set them on a small baking sheet, buttered side up.
  2. Set the baking sheet under the broiler for two minutes, until the bread is golden, then pull it out.
  3. Lay two Swiss cheese squares on each slice of toast, sprinkle with a pinch of salt and pepper, and slide the sheet back under the broiler for two minutes, until the cheese is melted and bubbling at the edges.
  4. Transfer to two plates and eat right away.

Note Swap the bread for crackers or a roll if that is what you have. The toast does not keep. Serve with pickled vegetables, an apple, or a simple salad dressed with oil and vinegar to round out the meal.
