Open-face cheese sandwich with tomato

Two slices of bread topped with melted cheese and fresh tomato, ready in minutes. This shelf has one ingredient, so we build a simple supper that lets it shine without fussing. Serve with a side salad or pickles if you have them.

Serves 2. 10 minutes, 5 at the stove.

  • 2 slices bread
  • 1 medium tomato

  • 2 slices Swiss pasteurized process cheese product singles

Staples

  • 1 tablespoon butter
  • to taste salt

  1. Heat the broiler to high. Lay 2 slices of bread on a small baking sheet and toast them under the broiler until they begin to brown, about 2 minutes.
  2. Remove the sheet from the broiler and lay 1 slice of Swiss cheese on each toast. Slice 1 medium tomato into thin rounds and lay them over the cheese, then season with a pinch of salt and pepper.
  3. Return to the broiler until the cheese melts completely and the tomato just warms through, 1 to 2 minutes. Serve right away.

Note Swap the tomato for sliced red onion if you prefer something sharper. Eat leftovers cold the next day, or wrap and refrigerate for up to a day. Serve alongside soup or a simple green salad to make it a full meal.
