  • 6 eggs
  • 2 tablespoons butter
  • to taste salt
  • to taste pepper
  • 1 small onion

  1. Heat a 10-inch skillet over medium and crack 6 eggs into a bowl. Whisk with a pinch of salt and pepper until combined. Dice 1 small onion into small pieces.
  2. Add 2 tablespoons butter to the skillet and when foaming, add the diced onion. Cook, stirring occasionally, until softened and starting to brown, about 4 minutes.
  3. Pour the whisked eggs over the onion and let them sit undisturbed for 30 seconds, then gently push the curds toward the center, tilting the pan so uncooked egg flows to the edge. Tear 8 slices of American cheese into pieces and scatter over as you go.
  4. Continue pushing curds gently until the eggs are mostly set but still look slightly wet on top, about 2 more minutes. Stop pushing and let it rest off heat.
  5. Toast bread while the eggs cook. Slide the skillet contents onto plates, top with any remaining cheese from the pan, and serve with toast for soaking up the runny bits.

Note The American cheese melts into the eggs rather than sitting in slices; if you prefer distinct cheese layers, lay whole slices on top in the last minute instead. Leftovers keep cold in the fridge for a day; reheat gently in a skillet with a splash of water to soften. Serve with hot sauce and a simple salad dressed with vinegar.
