Cheese toast with tomato and onion

When the shelf is down to cheese alone, turn to the simplest route: open-faced sandwiches where American cheese melts into salty pools over toast, crowned with raw onion and tomato for contrast. This takes ten minutes and feeds two hungry people.

  • 4 slices bread
  • 1 of each tomato and onion

  • 4 slices Land O Lakes 2% milk reduced fat yellow deli american cheese product

Staples

  • 2 tablespoons butter
  • to taste salt
  • to taste pepper

  1. Toast 4 slices of bread in a large skillet over medium heat until the edges turn golden, about 3 minutes, then turn and toast the other side for 2 minutes.
  2. Spread 1 tablespoon butter on each piece of hot toast, then lay 2 slices of cheese across each toast.
  3. Cover the skillet with a lid or foil and let the cheese melt over low heat for 2 minutes, until soft and starting to pool.
  4. Slice one tomato into rounds and one onion thinly, then layer them over the melted cheese and season with salt and pepper.

Note Swap deli ham or bacon under the cheese if you have it. Keep leftovers wrapped in foil and reheat in a low oven. Serve with a cold drink and a simple green salad or pickles on the side.
