Cheesy beef and tomato pasta bake

A weeknight pasta bake where the Italian blend cheese melts into the sauce and browns on top. This shelf has one main ingredient, so the rest comes from your staples and a quick stop for ground beef and canned tomatoes.

  • 14 ounces [400 g] canned crushed tomatoes

  • 6 ounces [170 g] pasta
  • 2 tablespoons olive oil
  • 1 small onion
  • 2 cloves garlic
  • to taste salt

  1. Heat the oven to 400°F [200°C]. Bring a pot of salted water to a boil and cook 6 ounces of pasta until just under tender, about 2 minutes shy of the package time; drain and set aside.
  2. While the pasta cooks, warm 2 tablespoons of olive oil in a large skillet over medium-high heat. Dice one small onion and mince 2 cloves of garlic, then add them to the pan and cook until fragrant, about 1 minute.
  3. Add 8 ounces of ground beef to the skillet and break it apart with a spoon as it browns, about 5 minutes, until no pink remains; season with salt and pepper.
  4. Pour in one 14-ounce can of crushed tomatoes and stir to combine with the beef and aromatics; simmer for 2 minutes.
  5. Fold the drained pasta into the tomato sauce, then tear or slice 6 ounces of the Italian blend cheese into pieces and stir through the mixture until it begins to melt. Transfer everything to a small baking dish.
  6. Tear the remaining cheese into shreds and scatter them over the top of the pasta. Bake until the cheese is melted and light golden, about 10 minutes, then rest for 2 minutes before serving.

Note Swap ground beef for Italian sausage if you have it. Leftovers keep in the fridge for three days and reheat gently in a covered baking dish. Serve with a green salad or garlic bread to stretch the meal.
