Browned butter cod with lemon capers

Browned butter transforms mild white fish into something rich and nutty in one skillet. Land O Lakes butter with canola oil browns quickly without burning, leaving its delicate solids in the pan to coat thick cod fillets. Finish with capers and lemon.

  • 1 fresh lemon

  1. Pat two 6-ounce cod fillets dry with paper towels and season both sides with salt and pepper. Heat a large skillet over medium-high heat until it is hot, about 1 minute.
  2. Add 4 tablespoons of the butter with canola oil to the pan and let it melt and foam, swirling the pan occasionally, until the milk solids turn golden brown and smell nutty, about 3 to 4 minutes. Scatter 2 sliced garlic cloves around the pan.
  3. Lay the cod fillets presentation-side down in the browned butter and cook without moving them until they are opaque on the edges, about 3 minutes. Flip and cook the other side until the fish flakes easily at its thickest point, about 2 minutes more.
  4. Transfer the cod to two warm plates and spoon the browned butter and garlic over each fillet. Squeeze fresh lemon juice over the top and serve at once.

Note Swap cod for halibut, sea bass, or any firm white fish. Leftovers keep in the refrigerator for two days. Serve with steamed broccoli or a bitter green salad dressed with lemon and olive oil to cut the richness of the brown butter.
