Shrimp alfredo with broccoli from the freezer

A frozen dinner kit scaled up with fresh vegetables and a touch of butter to stretch it into something that feels made. Broccoli and shrimp are already in the box, so this comes together in one skillet while the pasta heats.

Serves 2. 20 minutes, 10 at the stove.

Staples

  1. Bring a large skillet to medium heat with 1 tablespoon butter. While it melts, open the frozen dinner kit and reserve the pasta and sauce separately; the broccoli and shrimp can go directly into the pan.
  2. Add the broccoli and shrimp to the melted butter and stir to break up the vegetables and separate the shrimp. Cook until the broccoli just begins to soften, about 4 minutes, moving things around to prevent sticking.
  3. Pour in the pasta and sauce from the kit, scraping the bag to get all of it. Stir to combine and heat through, about 2 minutes, until steam rises and everything moves as one.
  4. Stir in 2 cups fresh spinach in two handfuls, letting the first wilt before adding the second, about 2 minutes. Season with a pinch of salt and pepper to taste.
  5. Divide between two bowls and squeeze fresh lemon over each serving.

Note Swap the spinach for arugula, kale, or another green you have on hand; the heat will wilt it down. This keeps, refrigerated, for one day; rewarm gently with a splash of water. Serve with garlic bread or a simple green salad on the side to stretch the meal.
