Pork carnitas burritos with pickled onions

The shelf gives you a whole meal in one package: seasoned pork and tortillas. Warm the carnitas, build fat burritos with sharp pickled onions and whatever else you have, and eat them straight from your hand while they are hot.

  • 1 lime

  • 4 pork carnitas burrito tortillas

  • 1/4 teaspoon salt
  • 2 tablespoons oil

  1. Slice 1 medium red onion into thin rings and place them in a small bowl. Pour 1/4 cup hot water over them, add the juice from 1 lime, and 1/4 teaspoon salt. Let them sit while you warm the pork.
  2. Heat 2 tablespoons oil in a large skillet over medium-high heat. Empty the package of pork carnitas into the pan and stir it often until it is hot and some edges brown, about 5 minutes.
  3. Warm each of the 4 tortillas directly over a flame or in a dry skillet for 20 seconds per side until soft and pliable.
  4. Lay one warm tortilla flat and spoon one quarter of the pork onto the lower third. Top with a handful of pickled onions and fold up the bottom edge, then fold in the sides and roll away from you. Set it seam-side down on a plate and repeat with the rest.

Note The pickled onions will keep in the fridge for a week and work with almost anything. Leftover burritos are fine cold or unwrapped and warmed in a pan. Serve with hot sauce, sour cream, or a simple green salad on the side.
