Spinach and cheese pasta with Florentine sauce

This is the quickest route to dinner when you have that one special jar. Spinach, three cheeses, and tomatoes already do the work; you just need pasta and heat.

Serves 2. 15 minutes, 10 at the stove.

  • 1 jar Florentine spinach & cheese pasta sauce

Staples

  • 6 oz pasta
  • to taste salt
  • to taste pepper
  • 1 tablespoon butter

  1. Bring a large pot of salted water to a boil. Drop in 6 oz of pasta and stir well.
  2. While the pasta cooks, pour the entire jar of Florentine sauce into a wide pan and set over medium heat. Stir occasionally until it comes to a simmer and you see a few bubbles breaking the surface.
  3. When the pasta is just tender, scoop out 1 cup of the cooking water, then drain the pasta.
  4. Tip the drained pasta into the pan with the sauce. Toss well to coat, adding a splash of reserved pasta water if it seems dry. Stir in 1 tablespoon of butter until it melts into the sauce.
  5. Taste and season with salt and pepper as needed. Divide between two bowls and serve at once.

Note The sauce will thicken as it cools; thin it with a little pasta water or warm milk if you prefer it looser. Leftovers keep three days refrigerated and reheat gently on the stove. Serve with crusty bread to wipe the bowl.
