Open turkey sandwich with cranberry butter

  • 4 slices bread (sturdy white or wheat)
  • 2 tablespoons dried cranberries

  1. Set the broiler to high and position the rack four inches from the heat. Chop 2 tablespoons dried cranberries fine and fold into 2 tablespoons softened butter with a pinch each of salt and pepper until combined.
  2. Lay 4 slices of bread on a baking sheet and spread the cranberry butter evenly on each. Broil until the bread toasts and the butter melts, about two minutes, watching closely.
  3. Drape 3 ounces sliced turkey breast on each of two toasted slices, folding the meat gently. Top each with the remaining two toasted slices, press lightly, cut diagonally, and serve warm.

Note Swap the cranberries for chopped fresh apple or sliced avocado if you have them. Wrapped separately, the toasts keep for one day; turkey keeps three days and slices cold into a next-day lunch. Serve with a side salad or quick roasted vegetables.
